Inspired by the traditional techniques of French baking, I have dedicated many years to the craft of breadmaking.

“The simpler the bread, the more it reveals the true skill of the baker.”

With this belief in mind, I trained at renowned bakeries in France, and upon returning to Japan, traveled across the country in search of the finest local ingredients.

Drawing on these experiences, I continue to bake authentic, honest bread — simple in form, yet unmistakably exceptional with every bite.
